Pastured eggs come from hens that actually live outside, moving across open grass where they forage bugs, seeds, and greens. That is a different thing from the cartons labeled cage-free or free-range at the grocery store, where the birds may never touch a blade of grass. The yolk tells the story: pastured eggs run deep orange and stand tall, a direct result of the hen's varied diet. Buying them straight from a working farm is the only way to know how the birds were really raised.
When you buy direct, ask three things: how often the hens are moved to fresh pasture, what they are fed on top of forage (soy-free and corn-free flocks are common at smaller farms), and whether the eggs are washed. Unwashed eggs keep their natural bloom, a protective coating that lets clean, dry eggs sit on the counter for a couple of weeks. Washed eggs need refrigeration. Neither is better, but it changes how you store them.
Egg supply follows daylight, not the calendar at the store. Hens lay hardest from spring through early fall and naturally slow down in the short days of winter unless a farm adds supplemental light. Expect the most abundance and the best prices from April through September, tighter availability and the occasional waitlist in December and January, and a fresh surge when the new spring pullets start laying.

Supermarket egg labels are mostly marketing. Here is what each one really guarantees, and why buying direct beats all of them.
